All Vegan Banana Bread Muffins with Vanilla Icing

This is a repeat dessert recipe.

Ingredients

3 Ripe Bananas

1 1/2c Flour

1/3c Sugar

1/3c Brown Sugar

1 1/2 baking Powder

1/2t Baking Soda

Pinch of salt

1t Vanilla

1t Cinnamon

1T Vegan Butter

1/4c Non-Dairy Milk

Optional chopped walnuts


Icing

3c Powdered Sugar

3T Vegan Butter

4T Non-Dairy Milk

2t Vanilla Extract

OR use 4T Non-dairy vanilla creamer and skip the last two ingredients.


Directions

  1. Set oven to 350.

  2. Mash banana's in a bowl. Add sugar, vanilla, melted butter and milk to the bowl and mix.

  3. Add flour, baking powder, baking soda, cinnamon and mix until combined.

  4. Spray muffin tin with oil. Add batter to the muffin tin, only halfway filled.

  5. Bake 15-20 minutes. While the muffins are baking, mix all icing ingredients in a bowl and place in the fridge.

  6. Once muffins are cooled, top with icing and eat!

*Makes 10 muffins
