Breaded Chicken and Roasted Root Veggies

Easy weeknight meal - just season with your favorite herbs and spices, throw it in one pan and bake!


Ingredients

4 Chicken Breasts

1 1-1/2c Panko Breading

2t Garlic Powder

2T Thyme

2T Rosemary

1t Cajun

Salt & Pepper

2 Gold or Red Potatoes

1 Onion

2 Sweet Potatoes

1T oil


Directions

  1. Set oven temp to 350

  2. Add panko and half of the seasonings to a plate, mix. Add top of raw chicken to the breading mixture, except for cajun. Only cover the top and place on baking tray

  3. Cut potatoes and onion and put on tray. Add oil to vegetables and sprinkle with the rest of the seasoning, including the cajun seasoning. Bake 45 minutes! Mix vegetables halfway through.
