Cajun Salmon Over Polenta in White Wine Sauce

Polenta is a great summer/fall side dish. It pairs well with chicken and seafood.


Ingredients

4 4oz Salmon Pieces

2T Cajun or Blackened Seasoning

1c Polenta

1 Small Package Cherry Tomatoes


Sauce

1/2c Chicken Broth

1 Lemon

1/4c White Wine

Splash of Cream

Salt & Pepper


Directions

  1. Set oven temp to 350

  2. Get the polenta cooking in boiling water according to the package. This usually takes 20 minutes.

  3. Place salmon pieces on baking tray and cover with Cajun seasoning. Bake 15 minutes.

  4. While the salmon is cooking, make the sauce. Throw all of the sauce ingredients plus cherry tomatoes and simmer for 15 minutes.

  5. Assemble!
