Chicken Chili

Ingredients

2 Chicken Breasts (or a Rotisserie Chicken)

1 Onion

1c Carrots

1/2c Celery

1 Jalapeño

1 Bell Pepper

1 can fire roasted green chilies

3 Garlic Cloves, minced

3c Chicken Broth

2 cans of Cannellini Beans

1T Cumin

1t Coriander

1t Salt

1 Can Corn

2T Sour Cream


Toppings: Avocado, cilantro, lime!


Directions

  1. Cook 2 pieces of chicken with rotisserie spices (recipe shared on my page!). Shred cooked chicken and set aside.

  2. In a large pot over medium, cook down onion, carrots and celery with oil - 3 minutes.

  3. Add jalapeño, bell pepper, fire roasted green chilies and garlic cloves and cook another few minutes.

  4. Add spices,chicken broth and beans - simmer for 15 minutes. If using corn, add now!

  5. Take 2c of soup and blend with 2T sour cream. Add back to pot and add shredded chicken.

  6. Top with avocado, lime wedges and cilantro!

*Makes 4 servings
