Add veggies and serve over rice or quinoa!
Ingredients
2 Zucchinis
2 Chicken breasts
1/2 Onion
1 Pepper
1 Tomato
1c Enchilada Sauce
Base (rice, cauliflower rice, quinoa)
Directions
Grease pan and set oven temp at 350.
Cook chicken and shred. Set aside. Put cut onion and pepper and put at the bottom of the pan.
Take zucchini and peel it so there are thin strips to wrap around the chicken. pieces of chicken and place at edge of zucchini strip then roll it up. Use a toothpick to hold together if needed. Place over veggies. Cover with sauce.
Cook for 20-25 minutes. Top with fresh tomato.
