Ingredients
2-3 Pieces of chicken, shredded
1 Onion
3-4 Bell Peppers cut in half
1 Can of Corn
2T Cumin
1T Garlic
1 Bunch of Cilantro
1/2c Cooked Rice
1/2 Cauliflower Rice
1/4c Quinoa
Salt and Pepper
1/2c Chicken Broth (if needed)
Toppings:
Tomatoes
Sour Cream
Cilantro
Cheese
Hot Sauce
Directions
Set oven temperature to 350.
Cook rice, quinoa and boil cauliflower rice until cooked. Set aside.
Cut bell peppers in half and set into baking sheet
Place onion in a pan with oil and cook for 2 minutes. Add garlic and cook until fragrant. Add shredded cooked chicken and corn. Cook for a few more minutes. Add cooked rice, quinoa and cauliflower rice until warm.
Place mixture into cut peppers and place in oven for 20 minutes.
*Makes 6 Servings. Enjoy with toppings.
