Chicken Piccata

Chicken piccata is very simple and SO delicious! You can omit flouring the chicken before cooking, capers (you’ll be missing out) or the amount of butter used if needed.

Ingredients
6 Chicken Breasts
1/4c Flour
3T Butter
4T Oil
1/2c Chicken Broth
1/4c Capers
1/2c Lemon Juice
Fresh parsley or basil
Splash of cream
Directions
Heat 1T butter and 1T oil over medium heat on the stove.
Run chicken through flour - it doesn't need to be coated. Put chicken into pan and cook until the outside is crispy. About 7 minutes per side. Work in batches if needed and add more oil or butter. Set cooked chicken aside.
Lower heat to a simmer. Add the rest of the oil and butter, if you haven't already. Also throw in chicken broth, capers, lemon juice and fresh herbs. Simmer for 5 minutes. Add chicken back in to warm. Throw in a splash of cream at the last minute!
