Chipotle Potato Salad

This twist on traditional potato salad was a winner in my house.


Ingredients

2 Pounds Gold Potatoes, cleaned and cut into bite-size pieces

6 strips bacon

1/2 cup finely diced green bell pepper

1/4 cup finely diced red onion

chives for garnish


Sauce

1/2c Mayonnaise

1/4c Lime Juice

3T Sauce from Chipotle peppers in adobo

1/4c Cilantro

1t Onion Powder

2 Garlic Cloves

Salt and Pepper


Directions

  1. Place potatoes in a pot of water and boil until cooked. About 10 minutes. Drain and set aside to cool.

  2. While the potatoes are cooking. Cook the bacon and chop. Chop vegetables and set aside. Mix sauce and set aside.

  3. When potatoes are cool, mix together and enjoy!
