Chipotle Turkey "Chili"

This dish is a monthly go to for me for lunches. It's a great way to clean out the cans in my pantry.


Ingredients

1 Can Corn

1lb Ground Turkey

1 Can Diced Tomatoes

1-2 Bell Peppers

1 Onion

1/2c Quinoa

1 can Black Beans (optional)

1c Cauliflower Rice

1T Chipotle Sauce

1T Cumin

2T Chili Powder

2t Garlic Powder

Salt & Pepper

1T Cilantro - for garnish


Directions

  1. Add 1T oil to a large pan on medium heat.

  2. Add chopped onion and saute for a few minutes. Add ground turkey and cook for another 8 minutes - chopping up pieces as you go! Add all spices and stir.

  3. Now add bell pepper, diced tomatoes, beans (if using), corn and cauliflower rice. Mix, cover and cook about 8 minutes. You can occasionally stir. Season with salt and pepper as needed

  4. Once veggies are cooked through, add cooked quinoa (you can cook it in a different pot at the start of the directions if you need to) and mix.

  5. Serve with cilantro and hot sauce!

*Makes 5 servings. Photos above differ based on different ingredients (one with tomatoes and corn, and one without)
