Easy healthy alternative to rice. You could go half rice and have cauliflower rice too.
Ingredients
1 Package Cauliflower Rice
1/4c Jalapeño
1/4-1/2c Cilantro, chopped
1 Lime
1t Sugar
Directions
Cook cauliflower rice in pot for 5 minutes. Add jalapeño, cilantro, lime and sugar. Cook until warm.
Serve with enchilada's, barbacoa, or any Mexican dish
