So good for over a piece of chicken or salmon. This was so filling I didn't need an additional side.
Ingredients
1 Avocado
1/2c Cucumber
1/3c Mozzarella
1/4c Red Onion
1/2c Bell Pepper
1/4c Olive Oil
1T Lemon Juice
1T Chipotle Sauce - from can with adobo peppers
Salt and Pepper
Directions
Chop all ingredients and add olive olive, lemon juice and chipotle sauce.
Mix and enjoy as a side or over your main meal.
