Crispy Shawarma Chickpeas over Veggies


Ingredients

Base:

1 Bag Cauliflower Rice

1/2 Onion

1 Bell Pepper

1t Cumin

1t Chili Powder

2T Garlic

1t Lemon Juice

1T Olive Oil

Salt and Pepper


Toppings:

Tomatoes

Shawarma Seasoned Chickpeas (in airfryer, stove top or oven to make them crispy)


Sauce:

1/2c Sour Cream

Za'atar

1t Lemon Juice

2t Chipotle Sauce

Salt and Pepper


Directions

  1. Cook onion and garlic with oil in a pan for 5 minutes until brown. Add pepper and cauliflower rice. Add spices. Add water or oil if needed and cook until vegetables are cooked through.

  2. Cover chickpeas in oil and shawarma seasoning and place in airfryer to make them crispy.

  3. Make sour cream sauce and set aside.

  4. Assemble and mix before eating
