Crunchy Rice topped with Spicy Cucumbers and Avocado

I need to work on my crispy rice technique, but they were delicious!

Ingredients

1c Rice

1/2 Avocado

Salt and Pepper

Spray Oil


Spicy Cucumbers

1 Cucumber

1T Sesame Seeds

2-3T Soy Sauce

2t Honey

1t Chili oil

1t Sesame oil

1t Rice Vinegar


Directions

  1. Cook rice according to packaging and place in an oiled baking sheet. Spray with oil and mix. Push into baking pan to be 1/2inch thick. Place in refrigerator overnight

  2. Cut cucumbers in half and then cut into thirds. Then cut to be 3 inches long. Place all other ingredients in a dish and place in the refrigerator overnight.

  3. When ready, cut the rice into small squares and place in the airfryer for 10 minutes to become crispy. Work in batches.

  4. Mash the avocado and add salt and pepper.

  5. Now assemble and enjoy!

*Makes 6-8 servings
