Easy Chicken Enchiladas

I made this using Mexican style shredded chicken that I made ahead of time for convenience, but my recipe for it is below! & always serve with Cholula.

Ingredients

Chicken

3 Chicken Breasts or 1 Rotisserie Chicken

1 Onion

2 Garlic Cloves

2 Tomatoes

2T Taco Seasoning

1 can Diced Green Chilies


Enchiladas

1 Package Flour Tortilla

Enchilada Sauce (my fav is Trader Joes)

1/2c Cheese


Directions

  1. Preheat oven to 350. Grease a baking pan.

  2. Cook chicken if you need to then shred. On the stove, cook onion, garlic, tomatoes, chilies and taco seasoning for 5 minutes until it's cooked down. Add cooked chicken and mix.

  3. Assemble! Place chicken in tortilla and roll. Add to pan and repeat. Then pour sauce over top - as much as you'd like. I usually use 1/4-1/2c. Top with cheese.

  4. Bake for 30 minutes!

*Serves 6 people.
