Egg Cups - 2 Ways

Made two different egg cups at one time! Add your own meat or vegetables to what you like best. They heat up great at the office or when you're crunched for time.


Fun tip: you can also break them up and put into a tortilla for a breakfast burrito.



Ingredients

6 Eggs

1 Sausage link - Broken up and cooked

3oz Mushroom

1/4c Spinach

1/4c Cheddar Cheese

Salt & Pepper


Directions

  1. Heat oven to 350. Spray muffin tin with oil. Prepare your toppings and veggies!

  2. Mix eggs in a bowl

  3. Place toppings (except cheese) in 6 tins, only covering 1/4-1/2 of the way up. Add eggs. Add cheese and salt and pepper on top. Bake for 12 minutes.

  4. Put them in a container and eat them for the next few days!

Left - sausage, cheese, mushroom

Right - spinach, mushroom

*Makes 6 servings
