Enchilada Bowl

Customize this bowl with different meat options and base! I chose ground turkey and cilantro lime cauliflower rice.


Ingredients

1lb Ground Turkey (substitute beans, beef or chicken)

1 Bell Pepper

1 Onion

1 can Green Chiles

2T Chili Powder

2t Garlic Powder

1T Cumin

2t Smoked Paprika

1 can beans (optional)

1/2 1 Jalapeño (optional)

Enchilada Sauce


Directions

  1. Cook your protein of choice over 1T oil on medium heat. Add onion, bell pepper, green chilies, jalapeño, beans (optional) and spices. Mix and cook about 7 minutes.

  2. Take mixture and place over rice or cauliflower rice.

  3. Pour warmed enchilada sauce over

  4. Enjoy with hot sauce and cilantro!
