A very refreshing soup packed with flavor.
Ingredients
5-6 Green Tomatoes
2 Cans Tomatillos
1-2 Poblano Peppers
1 Green Pepper
1 Onion
2 Garlic Cloves
1-2T Cumin
2t Thyme
2 Chicken Breasts (shredded)
4c Chicken Broth
2T Olive Oil
1T Cilantro
Directions
Place chicken breasts on a baking tray and cook in oven at 350 for 25 minutes.
Chop all vegetables and place in a pot over medium heat and cook for 10 minutes. You can add the spices as well. Stir frequently until cooked down. Add Chicken broth and blend with an immersion blender. Cook 5 more minutes.
Take cooked chicken breast and shred. Add to soup. Garnish with cilantro.
