Make with any type of rice and use as a base in a bowl or it’s just as good as a side dish.
Ingredients
2c Spinach
1 Jalapeño
1-2 Garlic Cloves
Salt/Pepper
2T Oil
1/4 of an Onion
Splash of Water
1/2c Quinoa
Directions
In a blender mix spinach, jalapeño, garlic cloves, salt/pepper, oil, onion and a splash of water. Blend until smooth!
Add mixture to a pot. Add quinoa and water (match how much quinoa you put in). Bring to a boil and then simmer for 10 minutes until cooked.
