Gumbo

Gumbo made the right way does take seem time to make, but its so worth it.

Ingredients

2-3 Chicken Breasts

1T Cajun

1lb Andouille Cajun Sausage - cut into slices

1lb Italian Sausage - cut into slices

1c Olive Oil

1c Flour

2 Bell pepper

3 Celery sticks

1 Onion

4c Chicken Broth

2 Bay Leaves

1T Thyme

1t Hot Sauce

1T Cajun Seasoning

2 Cans Okra

Rice (optional)

Salt & Pepper


Directions

  1. Set oven temp to 350. Put 2-3 pieces of chicken in a pan and sprinkle Cajun spice on both sides. Cover with foil and bake until cooked - about 25 minutes.

  2. Brown Andouille Cajun sausage and Italian sausage in a pot and set aside. Add 1c oil to the pot and 1c flour - this is the part that will take a while! You have to babysit this mixture on medium low for 30-45 minutes, stirring often. Once the mixture turns a brown color and has a nutty flavor it’s done (picture above)!

  3. Now add chopped bell peppers, celery sticks and an onion to the mixture. Cook until the veggies are soft.

  4. Now add 4c chicken broth and the juice from the baked chicken. Add 2 bay leaves and 1T thyme. Bring the mixture to a simmer for 10 minutes.

  5. Add some hot sauce, Cajun seasoning, okra (2 cans), sausage, chopped chicken, and salt/pepper and cook for 10 minutes.

  6. You can add some rice, but it did not need any.
