Healthy Fried Green Tomatoes

Skip the flour, egg wash and bread crumb routine. All you need is oil and Panko bread crumbs

Ingredients

2 Green Tomatoes

4T Olive Oil

1/2c Panko Bread Crumbs


Directions

  1. Heat 2T Oil in a pan over medium heat

  2. Slice green tomatoes into 1/2 inch slices - should get about 8.

  3. Create two separate plates - one with 2T oil and one with panko. Dredge tomatoes in oil and then press them firmly into the panko (each side).

  4. Place in oil and do not flip until they are ready! Cook 4 minutes per side.


*Makes 8 slices!
