Herb Potato Salad

Made with cashew cream and various herbs. This has so much more flavor than a traditional potato salad. Worth a try!

Ingredients

1 Package colorful little potatoes

8oz cashews

1 lemon

1/4- 1/2c Olive Oil

4T water

1T each of your favorite fresh herbs - (basil, thyme, parsley, rosemary)

1/2 Red Onion

Salt & Pepper


Directions

  1. Soak cashews in water for an hour until soft. Or you can boil them for 15 minutes. Put cashews, 1/4c oil, water and lemon juice in a blender and blend until creamy! Add extra oil or lemon juice if needed.

  2. Boil a big pot of water and place the colorful potatoes in. Boil for 10 minutes until soft. Drain and cool. Chop them in half.

  3. Place potatoes, red onion, cashew cream, chopped herbs and mix!
