Homemade Granola - No Added Sugar

Very simple and easy granola. This recipe freezes well if you can't finish all of it. Use it to top your yogurt, smoothie or eat as cereal.

Ingredients

4c Oats

2/3c Cashews

1/2c Uncooked Quinoa

Dash of Salt

1t Cinnamon

1/4t Ground Ginger

1/2c Olive Oil

1/2c Honey or Maple Syrup

1t Vanilla

1/2c Coconut Flakes

Dried Fruit - I chose 1/2c Pineapple


Directions

  1. Set oven temperature to 350.

  2. Mix oats, cashews, quinoa, salt, cinnamon and ginger in a bowl. Add oil, honey or maple syrup, vanilla and stir. Spread out on a baking sheet lined with parchment paper.

  3. Bake for 10 minutes. Sprinkle coconut flakes and mix. Bake another 10 minutes.

  4. When completely cooled, add your favorite dried fruit!
