Ingredients
Pretzels
Pretzels:
1c Warm Water
2t Yeast
3T Brown Sugar
3c Flour
1/3c Baking Soda
Beer Cheese:
1/2c Butter
3T Flour
1/2c Beer
2c Milk
1t Dijon Mustard
1t Worcestershire
Pinch Dried Parsley
2t Garlic Powder
1/4t Cayenne Pepper
2c Freshly Grated Cheddar Cheese
Salt & Pepper
Directions
Pretzels:
Use a bread maker to make the dough, if you have one! Otherwise, follow the instructions below
Mix warm water with yeast and let it foam a little. Then add brown sugar and flour - mix. Cut into 8 pieces and roll them out individually. Form into pretzel shape and let them rise for 15 minutes.
Set oven temp to 350.
Heat a large pot of boiling water and add baking soda until dissolved. Carefully drop formed pretzels into the pot for 30 seconds each side. Place on a baking sheet and put coarse salt on top.
Bake for 12 minutes.
Beer cheese:
Heat pot on stove on medium low. Make a roux with butter and flour until a paste forms. Add beer and mix - about 2 minutes.
Slowly add milk until its mixed - stir constantly until thickened. Add mustard, Worcestershire, and spices.
Once mixed, slowly add fresh cheddar cheese.
*You can make the dough a day ahead, just put the dough in the fridge after mixed.
