Lemon Baked Cod

Made two ways: one with panko bread crumbs and one without. The cod is just as good without the panko.


Ingredients

2 Pieces of Cod

1 Lemon

3T Olive Oil

2T Butter (I chose Vegan butter)

1T Garlic, sliced

2t Thyme

2t Cilantro

1t Paprika

1/4c Panko

1/2c Cherry Tomatoes


Directions

  1. Preheat oven for 350.

  2. Place oil, melted butter, lemon, garlic and seasonings (except paprika) into a pan and mix. Add cod pieces and flip a few times in sauce.

  3. Add paprika to pieces of cod. Add panko to cod pieces. Throw in cut cherry tomtoes

  4. Bake for 15 minutes.

* Serves 2 - you could add two more pieces and the sauce would still be enough for you all
