Marinated Steak Fajita's and Chipotle Sauce

Enjoy with with, on a salad or in a tortilla shell. Heck, enjoy by itself!

Ingredients

Steak

2lb Skirt Steak/Flank Steak

1/2c Olive Oil

1T Lemon Juice

2T Garlic Cloves

1/2c Cilantro, chopped

1T Cumin

Salt & Pepper

1T Ghee (or another high heat oil)


Veggies

1 Onion

2 Bell Peppers

2t Garlic Powder

Salt & Pepper


Chipotle Sauce

1c Greek Yogurt

1/2c Cilantro

1 Lime (or 1/2 lemon)

2T Chipotle Sauce


Directions

  1. Make Marinate and pour over steak. Place in fridge overnight. Heat ghee over medium hot pan - you'll want to get a nice sear.

  2. Brush off marinate from steak and place in hot skillet (or grill). Add some salt and pepper on top. Cook to preferences. Medium Rare is about 3-4 minutes a side. Let the steak rest.

  3. Lower heat on pan to medium. While resting, place chopped veggies into the same pan. Add salt, pepper and garlic powder. Stir them frequently until cooked. About 5 minutes. Set aside.

  4. Make chipotle sauce: combine all ingredients and mix.
