You could make this into a pita sandwich or include a Mediterranean salad for some fresh veggies
Ingredients
4 Chicken Breasts
1/4c Olive Oil
2T Red Wine Vinegar
1/2 Lemon Juice
3 Gold Potatoes
Greek Style Seasoning:
1t Thyme
1t Rosemary
1t Oregano
2t Basil
2t Garlic Powder
2t Paprika
Tzatziki Sauce
2c Grated Cucumbers
1c Greek Yogurt
2T Olive Oil
1T Lemon Juice
2t Dill
2t Garlic Powder
Salt& Pepper
Directions
Chicken
Marinate the chicken in red wine vinegar, olive oil, lemon juice and Greek style seasoning overnight.
Set oven temp to 350. Add chopped potatoes to the pan and baked at 350 until cooked, about 25 minutes. Move potatoes around halfway through.
While the chicken is cooking, make the healthy tzatziki sauce to go on top (below):
Tzatziki Sauce
Grate Cucumbers. Throw them in a strainer or a cheese cloth and try to get out as much moisture as possible.
Mix all ingredients and enjoy!
