This recipe makes a lot, but freezes well to save for a cold night. Top with cheese, hot sauce and fresh herbs.
Ingredients
1.5lb Ground Beef
1 Onion
2 Garlic Cloves, minced
2.5c Beef Broth
2 cans diced tomatoes
2 Bay Leaves
1 can Corn
1/2c Uncooked Quinoa
1c Uncooked Macaroni
2T Italian Herb Seasoning
Salt & Pepper
Directions
In a large pan, cook ground beef over medium heat and drain the juice. Add chopped onion and garlic - cook about 5 minutes.
Add beef broth, diced tomatoes, bay leaves, macaroni, quinoa and seasonings. Cover and cook until macaroni is cooked - about 10-15 minutes. Add corn and cook another 3 minutes.
Serve!
