Potatoes Au Gratin with a Twist

Poblano peppers are the secret ingredient added below.

Ingredients

4 Golden Potatoes - cut very thin

1-2 Poblano Peppers - chopped

1T Taco Seasoning

1/4c Light Cream

3/4c Shredded Mozzarella Cheese

1/2c Panko Bread Crumbs

Salt & Pepper


Directions

  1. Heat oven to 425.

  2. Add cut potatoes to a pan with oil. Let them cook for 10 minutes flipping them to make sure they are cooked.

  3. Add poblano peppers to the pan, salt, pepper and taco seasoning (or more). After 2 minutes, add light cream for 1-2 minutes until it’s bubbling.

  4. Add everything to an oven pan and top with shredded mozzarella cheese and panko bread crumbs. Cook 15-20 minutes!
