Pulled Pork Chili

Can't think of a better way to use leftover pulled pork!




Ingredients

2lbs pork shoulder

1/2c BBQ Rub (mine below)


Soup

1T Chili Powder

1/2t Cumin

1 Red Onion

2c Beef Broth

1 28oz can of tomato sauce

1 28oz can diced tomatoes

2 cans of black beans

2T BBQ sauce

Shredded Cheddar Cheese


Homemade Texas Style BBQ Rub

4t Salt

4T Onion Powder

4T Garlic Powder

1/4c Brown Sugar

4t Adobo Chili Powder

1/4t Cayenne

2t Black Pepper


Directions

  1. Set oven temp to 275. Rub BBQ spices on pork and cook covered for 7 hours. Then uncover the pork and cook another hour. Shred and set aside.

  2. Add chopped onions to a pot with oil and saute, about 5 minutes

  3. Add broth, tomato sauce, diced tomatoes, spices and pork to pot. Cook about 10 minutes on medium, then lower to a simmer. Add beans and BBQ sauce. Cook another 10 minutes and serve with cheese, corn bread and hot sauce!
