Red Veggies and Miso Soup



Ingredients

6c Vegetable Broth

1c Red Lentils

3-5 Red Potatoes

1 Red Onion

2 Carrots

2T Garlic Cloves

1T Dill

1/2c Red Miso Paste

Salt and Pepper





Directions

  1. Place all ingredients except the miso paste in a pot and bring to a boil. Simmer for 20-25 minutes. When the potatoes are tender, add the miso paste and stir. Cook for 5 more minutes and season with salt and pepper.

*Makes 6 servings
