Red Wine Braised Chicken

The sauce is great for a mix of drumsticks and chicken breast. Enjoy on pasta!


Ingredients

4 Chicken breasts

4 Drumsticks

1-2c Red Wine

1-2c Chicken Broth

1 Onion

2 Garlic Cloves, minced

8oz Mushrooms

2T Fresh cut Basil

Salt & Pepper


Directions

  1. Use a deep pan. Work in batches and sear Chicken in 1T oil. Then set aside.

  2. Add onions and saute until soft. Add garlic and saute two more minutes. Put red wine and chicken broth into pan. Bring to a boil, then simmer for 10 minutes.

  3. Throw in mushrooms, basil, salt and pepper and stir. Add chicken and cover for 15 minutes - flip the chicken a few times during this time.

  4. Thicken the sauce by mixing cornstarch with water.
