Roasted Cauliflower Soup

Soup that uses cauliflower as cream >

Ingredients

1 Cauliflower, chopped up

1 Red Onion

2 Garlic cloves

4c Vegetable Broth

1T butter (vegan, of course)

2T lemon

pinch nutmeg

1/2c Chopped Almonds

1T Parsley


Directions

  1. Set oven to 350. Chop cauliflower and add to baking tray. Bake for 30 minutes flipping halfway through. Save a handful for toppings

  2. Add 1T oil to a pot on the stove. Brown red onion in oil. Add garlic after a few minutes. Add vegetable broth and roasted cauliflower - simmer on medium low for 20 minutes.

  3. Remove the pot from the burner and add butter. Use an immersion blender to blend until creamy. Then add lemon juice and nutmeg and blend again.

  4. Top with toasted almonds, parsley and your leftover roasted cauliflower

*Makes 4 servings
