Roasted Root Vegetables with Tahini Sauce

Make this in the oven or air fryer.

Ingredients

1 Can Chickpeas

3-4 Sweet Potatoes

1 Can of Black Beans

Half an Onion

3-4 Carrots

1T Garlic

3/4c Cooked Quinoa

Salt and Pepper


Tahini Sauce

3T Tahini

1T Lemon Juice

2T Olive Oil

1t Garlic Cloves

Salt and Pepper

1t Italian Seasoning

2-3T Water (if needed)


Directions

  1. Cook quinoa on stove as directed and place aside.

  2. Peel and chop sweet potatoes and carrots. Place in air fryer and cook for 15 minutes with a little bit of oil.

  3. Make sauce while the root vegetables are cooking and set aside.

  4. Add half an onion, chickpeas and beans to air fryer and mix. Cook another 10 minutes. Add quinoa and cook another 2-3 minutes.

  5. Top with parsley and enjoy!
