Roasted Veggie Enchilada

These veggie Enchiladas are way better than chicken! Add to the air fryer to reheat the next day.


Ingredients

2-3 Large Sweet Potatoes - peeled and cut into small pieces

1 Red Onion

1 Jalapeño

1t Cumin

1t Chili Pwder

1/2c Quinoa, uncooked

1 can Black Beans

Fresh cilantro

Tortilla Shells

Enchilada Sauce

Cheddar Cheese

Salt & Pepper


Directions

  1. First, roast the veggies. Set the oven temp to 350. Place sweet potato, red onion and jalapeño on a baking tray. Add spices and 1T Oil and toss. Roast for 45 minutes. Mix every 15.

  2. Cook 1/2c quinoa according to package. Set aside.

  3. Once the veggies are done, place in a bowl with black beans and quinoa. Add cilantro, salt and pepper.

  4. Roll your enchiladas and place in a baking tray.Top with enchilada sauce and some cheddar cheese

  5. Bake until the tortillas are brown about 30 minutes

*Makes 6 servings
