Scallops in a White Wine Sauce

Under 30 minute meal here! You can enjoy the scallops over pasta, rice or my favorite: zoodles. The sauce pairs well with any vegetable side.



Ingredients

1/2 lb Scallops

1T high heat oil (ghee)


Sauce

1/4c Chicken Broth

1 Shallot

1/4c White Wine

2 Garlic Cloves, minced

1 Lemon


Directions

  1. Make sauce and set aside

  2. Boil water and place prepared zoodles in for 7 minutes. Drain and set aside.

  3. Use the same pot to heat the sauce up. Simmer for 7 minutes.

  4. Heat ghee in a pan over medium high.

  5. Pat down scallops before dropping into pan. Cook 3 minutes per side

*Makes two servings
