Shakshuka

This Mediterranean dish will start your day off right. Just add whatever vegetables you want to canned diced tomatoes and the spice mix below. Make sure you have crispy bread to dip!




Ingredients

1can diced tomatoes

1/2 Onion

1/2 Bell Pepper

1t Cumin

1t Chili Powder

1t Garlic Powder

Salt & Pepper

2-3 Eggs

Bread


Directions

  1. Heat oil in a pan over medium low. Add chopped onions and saute for 3 minutes. Add chopped bell pepper and saute another two minutes.

  2. Add can of diced tomatoes and cook until tomatoes are warm, about 5 minutes. Add spices and cook a few more minutes.

  3. Turn the heat down to low and create little breaks in the sauce for cracked eggs. I prefer to put a cover over the pan while the eggs cook but you don't have to. Cook a few minutes depending on how you like your eggs, but check the eggs often! They will cook fast.

  4. Serve with crusty bread and hot sauce
