Shrimp Polenta in a White Wine Sauce

Ingredients

1/2lb of Shrimp

Cherry tomatoes

Parsley


Sauce

1/2c White Wine

3T Olive Oil

3 Garlic Cloves

2T Lemon Juice


Polenta

4c of Water

Salt

1c Uncooked Polenta


Directions

  1. Put polenta ingredients in a sauce pan and bring to a boil and stir often. Reduce heat to low and stir occasionally until cooked, about 40 minutes.

  2. Cut cherry tomatoes in half and chop parsley. Mix sauce ingredients in a bowl and set aside. Heat oil on a pan on medium heat. Add shrimp and cook 3 minutes per side. Remove from pan.

  3. Add sauce and tomatoes to pan and simmer, about 10 minutes. Remove from heat and add shrimp.

  4. Assemble: Polenta, shrimp and sauce and top with parsley.
