Slow Cooker Barbacoa

I know I say this a lot but wow this might be the best thing I’ve ever made. AND it’s with a chuck cut of beef, which isn’t too pricey and you don’t need a large piece because it makes a lot. You can add peppers or onions to the juice too.


We made tacos and burrito bowls with a chipotle slaw and corn salsa. My burrito bowl was on a bed of quinoa and I roasted onions and peppers.


Ingredients

1 Chuck Beef

1/2c Beef Broth

Splash Apple Cider Vinegar

1Lime

3 Garlic Cloves

3 Bay Leaves

Chipotle Peppers in Adobo Sauce (I added 2 and wasn't too spice)

1T Oregano

1T Cumin

Salt & Pepper


Directions

  1. Place all ingredients in a slow cooker and cook on high for 4 hours. Then cook on low for 4 hours.

  2. On the last hour, shred beef and let it cook in the juices.

*3lb chuck feeds 6 people
