Another under 30 meal to warm you up this winter.
Ingredients
1lb Ground Beef (chicken or turkey)
1 Onion
2 Bell Peppers
1T Olive Oil (or butter)
1 Can Diced Tomatoes
1 Can Tomato Sauce
14-32oz of Chicken Broth (based on how much broth you want to have)
1/2T Thyme
1c Uncooked Rice
Salt & Pepper
Directions
Brown one pound ground beef in a large pot. Drain and set aside.
Add onion and 2 bell peppers to the same pot and brown in butter or oil - about 5 minutes.
Add a can of diced tomatoes, tomato sauce and 14-32oz of chicken broth. Simmer 5 minutes.
Add thyme and 1 cup of uncooked rice. Bring to a boil, then simmer until rice is cooked - about 8 minutes.
Add salt and pepper. Spice it up with some red pepper.
