Summer chili that uses squash instead of beans! This is another under 30 minute meal and only uses one pot. It's also a great way to use summer squash .
Ingredients
1lb Ground Turkey
1 Zuchinni
1/2 Butternut Squash
1 Onion
1 can Tomato Sauce
3T Chili Powder
1/2T Garlic Powder
1T Cilantro
2T Paprika
2T Cumin
Salt & Pepper
1T Olive Oil
Directions
Peel butternut squash and chop into 1 inch pieces. Chop other vegetables and set aside.
Place oil in a large pan on medium heat. Add turkey sausage and start to brown. Chop it up as it cooks. About 7 minutes in add chopped onion and cook 5 minutes. Add spices and mix.
Lower temperature to medium low heat. Add zucchini and butternut squash to pan and cover for 5 minutes. Add tomato sauce, cover and cook another 5 minutes.
