Topped with parsley and fresh tomatoes!
Ingredients
2 Sweet Potatoes
1 Can Chickpeas
1-2T Blackened or Cajun Spice
1 Tomato
1T Parsley
Sauce
1/4c Tahini
2T Dill
1T Lemon Juice
1-2T Water
1T Garlic
Salt and Pepper
Directions
Put sweet potatoes in oven or microwave until cooked.
Drain Chickpeas and cover with a little bit of oil and blackened or cajun spice. Place in airfryer or a hot pan and cook until crispy.
Mix sauce in a bowl. Add water to thin the sauce if desired.
Open sweet potatoes in half. Top with chickpeas, sauce, and toppings
