Lettuce wraps are a great way to cut down carbs and calories. They also add a great crunch to your meal.
Ingredients
1/2 lb Shrimp
1/4c Teriyaki sauce (homemade recipe below)
1 Onion
2 Bell Peppers
1c Cooked Quinoa
1T Cilantro
1 Head of Lettuce
Sauce:
3/4c Soy Sauce
1/2c Brown Sugar
2T Garlic Cloves
1T Ginger, Grated
3T water mixed with 2T cornstarch
Directions
Cook quinoa to package instructions. Make sauce and set aside.
Cut vegetables and cook in oil until tender over medium on the stove. You may add salt and pepper while they cook. Remove from pan. Use the same pan and add peeled shrimp. Cook about 5-7 minutes, flipping halfway through. Remove Shrimp.
Add sauce to pan and cook until thickened. Remove from heat. Add cooked shrimp and vegetables and stir until covered.
Assemble: Take a lettuce piece off and add cooked quinoa and teriyaki mixture. Top with cilantro!
