Tomato White Bean Soup with Shrimp

A very unique and easy soup to cure the winter blues!


Ingredients

1/2 lb Shrimp

1 Onion

3T garlic, minced

1T Chili Powder

1/2T Cumin

1t Red Pepper Flakes

1t Chipotle Sauce

2 cans Diced Tomatoes

1c Chicken Broth

1T fresh Basil

1 can White Beans

1/2c Orzo (uncooked)

1/2c Chopped Kalamata Olives


Directions

  1. Cook Shrimp in oil - 2 mins per side on medium heat. Set aside

  2. In a pot, heat up 1T oil on medium heat. Add onion and garlic and saute for 3 minutes. Add chili powder, cumin, red pepper flakes and chipotle sauce. Saute for another 3 minutes. Lower the temperature to a simmer and add diced tomatoes, chicken broth and fresh basil. Cook for 10 minutes. Add beans and orzo and cook another 10 minutes.

  3. Add shrimp and kalamata olives.


*Makes 4 servings
