Vegan Goddess Sauce

This sandwich was out of this world & the sauce was definitely better the next day.



Ingredients

2c Packed Fresh Basil

2 Garlic Cloves

1/2c vegan mayo

1/4c lemon juice

1/4-1/2c olive oil

1/2 ripe avocado (optional – for extra creaminess or if you prefer a thicker dressing)

kosher salt and black pepper to taste


Sandwich Toppings

Ciabatta Bread

Tomatoes

Bell Pepper

Alfalfa Sprouts

Arugula

Cucumbers


Directions

  1. Place sauce ingredients in a blender and blend until smooth. Adjust based on taste.

  2. Cut vegetables to be really thin - this sandwich gets messy!

  3. Assemble and enjoy!
