Vegan Pesto Cauliflower Rice and Quinoa

This side dish can be easily assembled if you already have pesto and use prepared cauliflower rice.



Ingredients

2c Kale, chopped

1/2c Olive Oil

1/2c cashews

1/2c Fresh Basil

2t garlic powder

Salt & Pepper

1.5c Cooked Quinoa

1 Package cauliflower rice


Directions

  1. Cook quinoa as instructed on package

  2. Place cauliflower rice in a pan and cook for 10 minutes, until soft.

  3. Boil Cashews in water for 15 minutes until soft, then add to blender. Add oil, kale, basil, garlic powder, salt and pepper and blend until creamy! Add more oil if needed.

  4. Throw quinoa into pan with cauliflower and top with pesto. Mix until warm.

*Makes 4 servings
