I liked being able to make this at home because 1. It’s easy and 2. I get to add whatever vegetables I want!
Can be a side dish or a main meal. I used half brown rice and half cauliflower rice to get the most vegetables in this dish.
Ingredients
1-2c Brown Rice (cooked)
1 Onion
1/2c Carrots
1T Olive Oil
1/2T Sesame Oil
1 Bell Pepper
1c Cauliflower rice
8oz Mushrooms
1/2c Snowpeas
2 Eggs - scrambled
1/2c Coconut Aminos
1/2c Low Sodium Soy Sayce
1T Teriyaki Sauce
Directions
Cook brown rice according to package to get 1-2c when its done.
Chop onion and saute in a large pan with oil and sesame oil for a few minutes. Add carrots and peppers and cook a few more minutes.
Then add cauliflower rice and cook 5 minutes. Throw in mushrooms, snow peas and continute stirring until those are soft.
Push vegetables to the side so there is some room for the scrambled eggs. Once those are cooked in the center of the pan mix with the rest of the vegetables.
Add cooked brown rice and mix. Then add the sauce to the pan until everything is warm.
Serve with sriracha
