Veggie Packed Roasted Corn and Zucchini Orzo Salad

A great summer side dish or main meal!



Ingredients

1/2c Uncooked Orzo

2-3 Zucchinis

1/2 Onion

1 Can Corn

1 Can Chickpeas

1 Package Cauliflower Rice

1/2c Uncooked Quinoa

1/3c Lime or Lemon juice

Goat Cheese

1/4c Olive Oil

1T Adobe Chili Powder

1 Bunch Cilantro

Salt & Pepper


Directions

  1. Chop onion, zucchini and add to a pan. Add corn as well. Cover with oil and place in an oven at 350. Cook for 20 minutes stirring halfway. Or use an air fryer.

  2. Cook Quinoa & set in the fridge. Put orzo and cauliflower rice in the same pot and cook until tender. Place in the same bowl as the quinoa and put back in the dridge.

  3. Once the veggies are cooked, add to the pasta mixture. Add lime juice, chickpeas, olive oil, cilantro and chili powder.

  4. Add goat cheese and mix!

*Makes 8 servings
