Yellow Curry Shrimp over Zoodles

The sauce is a yellow curry simmer sauce from trader joes, but you can always make your own with coconut milk, curry powder, onion and garlic. Easy under 30 minute meal for those trying to stay healthy.




Ingredients

1/4c Yellow Curry Simmer Sauce from Trader Joes

1/2lb Shrimp

2 Zucchini (if you are making your own zoodle)

1T Oil


Directions

  1. Make zoodles. Place in boiling pot of water and cook for 7 minutes. Strain and set aside.

  2. On the stove, place shrimp in a hot pan with oil and cook 2 minutes per side

  3. Warm simmer sauce in microwave or on the stove

  4. Bring them all together!

*Serves 2
